Kombucha tea is a drink with an ancient tradition, its consumption dates back more than 5.000 years in China and to the times of the Mayans, Incas and Egyptians. In my family home, my mother and grandfather made it, who in turn distributed "children" of the fungus to new creditors of the recipe, explaining its properties and benefits through. And it is that the Kombucha tea that we buy today in specialized stores is very easy to make at home.
Ingredients: About 13 cups of bottled water 1 cup of sugar 5 tea-size tablespoons of loose black tea (You can use 4-5 tea bags) 1 kombucha mushroom and its liquid (if someone you know doesn't give it to you, you can buy it online ) Bring 3 cups of the water to a boil, add the sugar and stir until dissolved. Remove from heat and add the tea. Let stand for about 30 minutes. Strain into a wide mouth glass container - do not use metal or plastic - and add the kombucha mushroom, its liquid and the other 10 cups of water. Now cover the container with a porous cloth and an elastic band and let it ferment for 10-15 days in a warm and dark place. As your homemade Kombucha ferments, the fungus will grow and conform to the dimensions of the surface of your container, forming like a lid.
Your homemade kombucha tea will be ready to be consumed when you feel the bubbles of the ferment and a sweet and sour taste at the same time. Remove the mushroom and store it in a jar covered with the liquid in the fridge. Now transfer your tea to a bottle and let it ferment a couple more days at room temperature, then store it in the fridge and consume it within 3 months (although the sooner the better).
Don't worry about the sugar and/or theine, they practically disappear in the fungus fermentation process to make way for this wonderful kombucha tea full of properties and benefits:
